Varsol is the best sushi restaurant in the U.S., hands down. From the ambience, to the service, to the food, this was the best restaurant experience I’ve ever had. Varsol is absolutely stunning, it’s like walking into an art museum. The servers are attentive, kind and quick, they set a very welcoming atmosphere. The sushi is served fresh at the perfect temperature. The sushi is also plated in a story-telling manner. It’s so hard for me to pick a favorite roll because all of them were phenomenal. Mitapon roll( truffle roll), sashimi and temaki were my personal favorites complimented with a bottle of Cabernet franc. I came with a big group so we sample a little bit of everything from the menu. Again, Varsol is phenomenal and you’re guaranteed to have a great time. Thank you Carlos(owner) for hosting us and for having the courage to follow through on such an incredible vision. You’ve gained a loyal customer. Please don’t change.
The sushi isn’t bad, but that was the only highlight. Firstly, the green tea i ordered was some awful powdered stuff served in lukewarm water in a nespresso cup. This is lazy and something that a Japanese restaurant should take pride in doing better. Next, the gyoza appetizer we ordered was really cold in the middle (which is quite the turn off), and their solution was to simply microwave and re-serve it… Again, lazy. I don’t think it’s a high expectation for a restaurant that serves an under-cooked dish to make you a fresh new plate right off the stove. This is the simplest of courtesies in the restaurant industry that go a long way. In the end though, the sushi was serviceable and at least fresh. Our server was nice but just disappeared at the end and left us sitting and waiting for the check til we hailed someone else. Not a terrible spot but personally wouldn’t come again.
Loved the food, but the service was not very good. They have a ton of employees and we came in during non busy hours (5:30-7 pm). There was a ton of empty tables and no one came to our table for a long time in between the meal and before receiving the check. I felt like I barely knew who my server was because I barely saw him. Food and drink was awesome, shame service was that bad.
Excellent experience. I challenge you to find me a restraunt with better service. Every dish here was incredible.
