The wait was not too terrible. Very fast service. Portion is big. And the noodle is very delicious. Worth the wait.
Pretty good artisan noodle. Too bad the waitress is rude and doesn't care...
Pictured is the Chashu Tsukemen. I was definitely a bit disappointed. I think the soup here is a lot less fish-forward compared to Tsujita in Japan. The extra dose of gyofun fish power is missing in the dipping soup and the noodles seem to be made with only the wheat endosperm. I rmb the noodles I had in Tokyo have a darker color. I don't know if this location provides soup wari to dilute the dipping soup after you finish with the noodles but the soup is pretty thin already...
Best broth I may have ever had! If you're in the area, definitely worth a visit!
We cannot expect the quality when we eat the same place in Japan.
