Borealis

Just got home from a wonderful weekend getaway, which included enjoying several wonderful meals at Borealis! Located inside the Hyatt, the atmosphere was casual yet a bit upscale. Everything was very clean, and the wait staff was pleasant and helpful. Over two days, I enjoyed Asian tacos, a beet salad, roasted Brussels, avacado toast, salmon fritata, and grilled salmon. Aside from my salmon being slightly overcooked and dry, everything was perfection.

Locked doors into estasblishment so have go the long way. Letting a child just jump up and down on furniture. Drove from the West side of town to try the food for restaurant week and.... Not taking card payments. What an absolute waste of time

Excellent food and service. Was one of the best breakfasts I have had. Potatoes were hot and crisp. The bacon was baked perfectly, and Denver Omelet was hot and fresh with great ingredients.

The food was good, but selection is rather limited, particularly under $20 options.
