During a recent visit to Las Vegas, my dining companions and I had the pleasure of dining at 8East, a restaurant that has quickly topped my list of must-visit spots in the city. From the moment we walked in, the open kitchen concept caught our attention, allowing us a sneak peek into the magic behind the meals we were about to enjoy. Our culinary journey began with the short rib dumplings, a dish that set a high bar for the evening. The dumplings themselves were tender and flavorful, but it was the horseradish cream sauce that truly elevated the dish, adding a zesty kick that we couldn’t get enough of. Next on our table were the stir-fried green beans, which were anything but ordinary. Paired with ground chicken, this dish was a delightful mix of textures and flavors, showcasing the kitchen’s ability to transform simple ingredients into something extraordinary. However, the real highlight of our meal was the brisket fried rice. This dish was not only a testament to the chefs’ mastery over their craft but also the star of our dining experience. Each bite was packed with savory goodness, making it clear why this dish is a favorite among patrons. One aspect of 8East that deserves special mention is the portion sizes. A special shoutout to our server and bartender, Jimmy, who was phenomenal. Jimmy’s friendly demeanor and extensive knowledge of the menu’s best bites significantly enhanced our dining experience. He was quick, efficient, and it was evident that he is passionate about ensuring his guests are happy. In conclusion, 8East is not just a restaurant; it’s a culinary experience that delights the senses and brings people together over great food. Every time we stay at Circa we always hit this place up! Very very good food and super fast service! It's very hard to find a place in Vegas that has fast service but this place does! They always have lots of workers that take great care of you! So if you go there please tip good! I always do! They have lots of staff which is kinda unheard of nowadays!

Sounds crazy but I had plans with my brother to come here since this place opened. Locals being locals it never happened so I ventured in one day on my own, excited to try the signature Ramen I had been waiting to try. I ordered the ramen and the lamb lollipops. It was exciting to be able to see them cooking while sitting at the bar. There is CLEARLY a strict cell phone policy for employees because everyone was acting like they were in HS finding “creative” ways to text their loved ones back The food comes out in like 2.5 minutes no joke. The broth is prepped beforehand so that makes sense. The ramen was a little bland to me and I have never had the noodles that thick so that was a turn off for me. There were a SH*T TON of mushrooms in the ramen, be warned if you’re like me and don’t eat them too much. I don’t eat a lot of lamb buuut that lamb was GAMEY The aftertaste was like I had liked somebody’s sweaty armpit. The service was incredible. Brandon was extremely attentive and social.

The service was friendly and fast. The food was fairly ordinary.

It was late and our first night in Vegas. We finished a show and decided to get a late night dinner. I got the steak noodle salad and my husband got the 8 east ramen. He was upset because the veggies wasn’t cook before hand. He was super hungry and finish the dish asap. We also got the cumin lamb lollipops. It was my favorite. Super tasty and juicy. I also had to end the night with an ipa. It was good service and fast.

8 East offers an exceptional ramen experience. The inviting atmosphere sets the stage for a delightful meal. Landon, our server, provided top-notch service, making our dining experience even more enjoyable. The ramen was flavorful and authentic, showcasing a perfect blend of textures. A must-visit for any ramen enthusiast!

Great food, great service

Good food. Steak Soba noodle salad is bomb!!

I took a “tour” of their small plate and appetizer menu. There was not a miss in the entire experience. My concierge/tour guide Landon was a delightful host and great at explaining the dishes and expectations. Can’t wait to go again!
