    • Baby Falcon IPA

We notice impressions of tropical citrus, bright mandarin orange juice, and hints of melon rind and floral crushed lime laced dankness. Entirely drinkable for the day, and equally forgettable as it is impactful.

    • Clever Girl IPA

Clever Girl IPA, our incredibly light bodied, soft and dryer American IPA with impressions of tropical citrus, dark berry jam, grapefruit pith, and orange-soaked pine returns today. This beer, as always, is hopped with our hand selected Citra and Mosaic. We’re actively, if you didn’t notice, attempting to keep this one around and overall more available than we have in the past. The tropical focused counterpoint to our other mainstay IPA deserves more stage time. 6% ABV

    • Falcon Smash IPA

Our ever faithful house IPA born from both the necessity of what we had to work with, and what we had to do. Brewed with a softer grist of North American 2 Row and Malted Wheat, fermented with our expressive house ale yeast, and dry hopped with a focus on the Falconers Flight hop blend, this beer delivers on balanced hop and yeast character of brighter citrus, orange pine marmalade, and stone fruit cohesion. 7% ABV

    • Nectar and Knife DIPA

Our house DIPA, which at this point might as well be made official, makes its return for the weekend. Hopped extensively with one of our all-time favorite and earliest hop combinations: Simcoe and Mosaic. The familial connection between these two varietals, while inherently interesting, seems to offer something more than the sum of the parts, especially in the context of our characterful yet cohesive house ale yeast. A classic offering from us, we find notes of ripe orange marmalade, grapefruit zest, lightly floral mango tones with that classic, complimentary fresh-cut danker pine finish.

    • Liberty or Death Porter

Liberty or Death Our UK inspired London Porter returns after the quite hiatus, and in cans. Nearly 10 years ago, we brewed and released this beer as one of our original five offerings on opening day, and somehow, we haven’t changed much at all since then. Somewhat firmly based on a recipe from the mid 1800’s, with almost none of the typical roasted malts found in modern porters, this one heavily showcases the finest Brown and Amber malts grown in Great Britain. Notes of dark roasted fresh coffee, caramel burnt dark sugar, with a dark cacao like full bodied silky feel from our house ale yeast. 6% abv somehow, we haven’t changed much at all since then. • Second Pressings

From aging our mixed fermentation beers in Red Wine barrels to using various varietals of grape pomace in our Floraison series, the Pollak crew has been a friend to the Triple Crossing team for almost our entire 10 years. In the fall of 2023, the Triple Crossing team visited our friends at Pollak Vineyards in Waynesboro, VA for a long-awaited collaboration. When Nick brought up the idea of collaborating on a wine produced and bottled at Pollak, we jumped at the opportunity. The resulting product is a wine loosely based on the piquette style of low alcohol, white wine made on second pressings of Viognier and Chardonnay grapes. Weighing in at 8.6% ABV, Second Pressings La Boisson displays impressions of honeydew melon, ripe strawberry, light musk, green tea and a specific Aqua perfume. This style, and specifically this wine, are purpose built for consumption on these 70 degree spring days with a side of sharp cheddar and brie, if we do say so ourselves.

    • Floraison Carbonic Maceration TO-GO

Our 6.8% ABV Floraison utilized a process called carbonic maceration often used in winemaking where, under an anerobic environment, fermentation can take place using the residual sugars found in the pomace. We sent a portion of the pomace into stainless and purged the tank of oxygen, allowing the process to take place naturally, at the pace of nature. After about 4 weeks, we sent our carefully selected Saison blend over top of the pomace and let it condition for 4 months. On the nose we find high minerality- smells like an ocean breeze, an extremely light body and a dry lean finish. Balanced acidity for some complexity, but easy drinking. Notes of lemon water, grape tannins, hay, and lime leaf.

    • Floraison Pomace TO-GO

Our 6% ABV Floraison bottles sat atop pomace for 8 months in stainless, allowing those flavors to fully come together before bottling. While a much less involved process than its counterpart, we notice a beautifully balanced beer-wine hybrid with delicate tasting notes from the earthy, stemmy pomace. Additionally, we notice notes of rose water, flower stems, bitter lemon rind, candied grapefruit rind, a heavier body and a touch more acidity than its counterpart, though it dissipates quickly. A much more wine-like beer of the two offerings.

    • Off the Beaten Path

Introducing our latest mixed fermentation offering, Off the Beaten Path, and this time featuring nothing. This batch, utilizing four Vienna lager barrels was transferred into red wine barrels with our house mixed culture, and then moved to stainless for two solid months. The bottle conditioning, as it does, took a full 15 months to find the desired carbonation and cohesion we look for. This beer offers lower levels of acidity while displaying notes of tannic lemon rind, sprees, sweeter oak celery, and white wine grapeness. Incredibly drinkable yet brightly interesting enough to stand on its own. 5% ABV
