(Maine / 8.0% / 375 ML / Single) Allagash Century Ale is a Saison brewed with Pilsner, raw wheat and biscuit malt. It is fermented for 2 years in stainless steel tanks with a blend of a traditional Saison yeast and Brettanomyces. Before packaging it's dry-hopped with a blend of German and American experimental hops. Golden in color, Century Ale has aromas of toasted crackers, passionfruit and citrus. Complex flavors of biscuit and fruit are followed by a dry, slightly tart finish.

(Maine / 6.3% / 375 ML / Single) This blend of spontaneously fermented beer is aged on blackberries. It's brewed with Pilsner malt, 40% raw wheat, and aged whole-leaf hops. The unfermented wort is then transferred to a large shallow pan called a coolship, which allows the hot wort to mingle with wild yeast and souring microflora in the Maine air. After fermenting and aging in French oak wine barrels for over two years, they add blackberries and let it rest for an additional five months. The finished beer’s aroma exhibits hints of lime zest and an herbal, berry-like quality. The tart flavor evokes multiple facets of blackberry, including just-ripened fruit and rich, juicy berry.

(Maine / 7.1% / 375 ML / Single) Tiarna is a blend of two beers, one aged in oak and fermented with 100% Brettanomyces, and the other fermented in stainless steel tanks with a blend of two Belgian yeast strains. Both beers were brewed with a combination of 2-row and wheat malt, in addition to specialty grains. It was hopped with Hallertau, Styrian Goldings and Cascade. The finished beer is dark golden in color with citrus, pineapple and bread in the aroma. The flavor of this tart beer has notes of grapefruit, lemon, and bread crust, and a long, dry finish.

(Colorado / 5.7% / 750 ML / Single) EJECTOR begins as JUMPSEAT, Black Project's single dry-hopped sour ale. Once the base beer is finished, they pull a small amount out of their ever-changing solera blend and transport the beer to another tank along with a variety of hops. The beer sits on the hops for 3-4 days, extracting only the bright and citrusy character from the hops. After roughly half of the beer is bottled to make Jumpseat, there is a second dry-hop addition and the remaining beer rests for an additional 3-4 days, creating more grassy, earthy flavors. This version features Simcoe and Enigma hops.

(Colorado / 5.0% / 500 ML / Single) This is a blend of Lambic-inspired, spontaneously fermented beer, brewed in accordance with the Méthode Traditionnelle guidelines. It's aged for one, two, and three years in neutral oak then combined with freshly-picked Neomexicanus wet hops from Voss Farms in Arvada, Colorado. They further aged the beer for two weeks in more than 20 pounds of hops in each of several freshly emptied red wine oak barrels. The slightly sour and funky base beer melds with sweet pine, melon, and berry characteristics from the hops. Wild microbes like Black Project's are known to be able to bio-transform hop aroma compounds and flavor compounds, releasing new and interesting flavors from the hops as the beer ages.

(Colorado / 4.5% / 750 ML / Single) Made with the same cultures Casey use for their Saison and East Bank, The Low End is a hoppy farmhouse ale. They use a huge amount of Colorado Cascade hops for both the first wort and whirlpool additions. The result is a very tart citrusy beer.

(Brussels / 6.0% / 330 ML / Single) Directly inspired by traditional saisons of the 19th century, beers meant to quench the thirsts of farm workers at harvest time, the Saison de la Senne is a beer of mixed fermentation. It is both bitter and aromatic thanks to particularly generous hopping, while at the same time developing a vinous and tangy character thanks to a blending with old lambic from the Cantillon brewery. Ripened in oak barrels for 9 months and listed at 4.3% abv.

The production process is nearly the same the brewery's Kriek de Ranke, the difference being that no cherries are added. It’s a naturally acidified ale that displays an adept balance between sweet and sour. While the brewers deliberately age this beer at the brewery, it can indeed be laid down for a long period of time. A magnificent and elegant sour, each sip has notes of fruit, mild spice, awesome tartness, and a malty yet dry finish.

(Hainaut / 6.5% / 750 ML / Single) This beer is inspired by the tradition of steeping whole cherries on Flanders Oud Bruins in the city of Oudenaarde, Belgium, where many producers were making Oud Bruins in the first half of the 20th century.

(Hainaut / 7.0% / 750 ML / Single) Kriek De Ranke is unique because the composition is based on two different styles of sour ales: the red-brown style from the Roeselare/ Kortrijk/ Oudenaarde-region and the Lambic style from the Pajottenland-region, close to Brussels. De Ranke produces and acidifies the red-brown ale themselves, after which they add locally grown and famed sour cherries, which age in the ale for 6 months. Once fermented, the cherries are removed and the beer is blended with lambic from Girardin. It then matures until ready to drink. It’s an explicit thirst quencher that contains nearly no sugar. Quite tart, beautifully red, lots of tannin, mild hop bitterness, and overall simply superb. Truly a unique and exemplary kriek.

(Flemish Brabant / 6.5% / 750 ML / Single) This Doesjel was bottled on the December 1, 2020, and was intended to be an Oude Geuze. Because of the high proportion of older lambikken, the fermentation did not continue in the bottle and the blended lambik beer remained flat. The yeast dozed in, hence the name – a local dialect for that typical little sleepy knock you get over noon. In return, with a natural-white-wine-like aroma and malty citrussy taste, the resulting beer is a subtle lambik blend, with a weighted average age of about 30 months upon its release. The oldest lambikken were brewed at the beginning of 2018. This is the first Doesjel in 750 mL bottles since 2006.

(Flemish Brabant / 7.7% / 750 ML / Single) For this, Druif, 3 Fonteinen co-fermented Belgian Dornfelder wine grapes with one- and two-year old lambik in a 53/47 cut. They used the freshly pressed and shortly skin-macerated juice and put the unfermented juice with young lambik for continued fermentation in stainless steel. Afterwards, they blended with two-year old lambik. All lambikken originate from seven different barrels and seven different brews. The final fruit intensity is 31.6%.

(Flemish Brabant / 8.3% / 750 ML / Single) For this Druif/Kriek, 3 Fonteinen blended a Belgian Dornfelder druivenlambik (lambic with wine grapes) and a kriekenlambik (lambic with cherries) in a 50/50 proportion. They used both young and two-year old lambikken, originating from nine different barrels and nine different brews. The combined maceration took eight months and the final fruit intensity is 510 grams per liter of sour cherries and freshly pressed, skin-macerated grape juice.

(Flemish Brabant / 9.1% / 750 ML / Single) This Druif features the Muscaris wine grape variety, a crossing between Solaris and Muskateller. This rather young variety originates from the Freiburg region in Germany and combines an intense muscat bouquet with a higher sugar density than other Muscat varieties (especially when harvested slightly late). Anyhow, 3 Fonteinen put the grape must with fifteen-months old lambik on a small oak foeder. The lambikken that they used for blending was a three-year old lambik (and makes up more than 10% of the total volume). The final fruit intensity is 469 grams of Muscaris grapes per liter of Druif. This is 100% 3 Fonteinen brewed lambik.

This fruit lambic is then blended again with more lambic to obtain a minimum intensity of 35% fruit. Hommage is a bodied raspberry lambic beer, with an intense deep red forest fruit bouquet. This unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added. This particular Framboos has macerated for five months. The final fruit intensity is 37% (so 370 grams of fruit per litre of finished Framboos). The summer raspberries are hand-picked and cultivated organically by Ferme Framboos.

For this batch of Framboos, 3 Fonteinen used raspberries from Ferme Framboos, located in beautiful Huldenberg, Flanders. These raspberries, hand-picked in the summer of 2019, macerated for more than three months on a single oak barrel. While macerating, they only used lambic originating from one brew and from one barrel, and they used another single lambic from one barrel for blending.

(Flemish Brabant / 6.7% / 1.5 L Magnum / Single) While there was still enough residual sugar from the potent 3 Fonteinen brewed lambikken, making up almost half of this blend, the fermentation simply did not continue in the bottle. They waited almost an additional two years before releasing this bottle. This blend of Golden Doesjel really stands out as it shows the complexity of old lambik. Meanwhile, the weighted average age of the lambikken has mounted up to more than 42 months. They used lambikken from four different barrels and originating from six different brews with three brewers.

(Flemish Brabant / 6.6% / 750 ML / Single ) This particular Intense Rood has macerated for exactly 6 months. The lambics originate from 3 different barrels and 4 different brews. The final fruit intensity is at 513 grams of fruit per liter of finished beer.

(Flemish Brabant / 7.1% / 750 ML / Single) Drie Fonteinen had a batch of Pedro Ximenez (PX) sherry barrels that were on the peated side (albeit subdued). Accordingly, they decided not to use them for their famed Zenne y Frontera, but instead to blend them with other fruit lambikken into Gueuze and more fruit blends. This was the first of such blends to be released. Sour cherries were macerated partly on young peated lambik and partly on two-year old straight lambik in a stainless steel tank. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic Saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.“Pissenlit” is the French word for dandelion.

Specifically, Texas homebrewer Dustin Kirkland grew several dozen pounds of Cascade in his backyard. The water came from the Trinity Aquifer below Jester King. The barley and wheat were grown in west Texas and malted by Blacklands Malt, and the hops came from Dustin's backyard in Austin. The all-Texas wort was chilled in our coolship and 100% spontaneously fermented with native yeast. After about two years of maturation in oak barrels, it is blended and bottled.

It took us five years before we were able to add this dark golden blond quadrupel to our barrel-aging program. Matured for two years on Madeira oak barrels, this beer will for sure touch your taste pallet.

(West Flanders / 13.0% / 330 ML / Single) This beer takes its name from Delphine Boël, the unlawful daughter of King Albert II. She struggled for acknowledgment in both her professional and private lives, so the team at De Struise decided she deserves a tribute fit for a princess. Cuvée Delphine is their Black Albert, carefully matured on Four Roses bourbon barrels for 12 months. Mrs. Boël has kindly allowed De Struise to use her artwork for its label, which speaks for itself. In a sea of sickly sweet and heavy bourbon aged stouts, they wanted Cuvée Delphine to shine brightly as a pinnacle of balance and restraint. Only with a base beer as potent as Black Albert could we manage to make the aging process shine. Notes of oak and slight vanilla pair extraordinarily well with the familiar coffee and brown sugar notes from the Black Albert. The subdued alcohol ties it all together in a lush, mellow experience. Cuvée Delphine will set you free.

(West Flanders / 10.0% / 330 ML / Single) De Struise’s PGR has aged for 24 months on oak barrels and has been bottled for the first time on the 27th of December 2007. The main difference with the Pannepot Reserva is that PGR matured the last ten months on Calvados oak barrels, adding extra complexity to the beer. They dedicate this beer as a tribute to Jeppe & Michael of Ølbutikken in Denmark. Those gentlemen were the first to discover their beers on an International basis back in 2004 and are responsible somehow for their beers being all over the globe since then. As a token of gratitude towards Jeppe & Michael, the first shipment of PGR was scheduled to Ølbutikken so they could be the first to launch its commercialization.

After a lifetime of brewing tasty, but ‘safer’ beers, this was their first venture into a world of extremities and has a great deal of responsibility in making them into what they are today. This ‘Old Fisherman’s Ale’, named after the fishing trawlers on which men would risk life and limb to feed their families, sits somewhere in between a Belgian Strong Dark Ale and a Stout. It pours a luscious dark brown with a creamy tan head. Each sip hits you with complex flavors of toasty bitterness and deep caramel sweetness. With all its dark and strong complexity, this beer lends itself perfectly to all types of barrel-aging, which is exactly what we've done.

Certified organic. Sauvignon Blanc, Pinot Noir, Viognier. Primary fermentation with natural yeast, secondary fermentation in bottle, not disgorged, unfiltered, unfined. Their pet-nat project. Cloudy lemon and only very lightly fizzy. Smells like a slice of fresh, warm sourdough bread with a dollop of lemon curd on top. Dry and tingling, slightly salty. It tastes like the home-pickled lemon peel I keep in my fridge (how to not waste lemon peel…) with that wonderful edge of bitterness and tang and citrus oils, but tempered a little by the saltiness and pickling. Great fun and so very, very refreshing. If you wanted a manzanilla sherry, but didn’t feel like the alcohol, then this is your drink. Bring on the boquerones…

This wine is composed of a selection of juice from the vineyards of the Loire Valley and is based heavily on Chenin Blanc with a dollop of Chardonnay to add richness. Zesty with aromas of yeast and toast followed by the citrus flavors of chenin blanc, it’s got plenty of invigorating bubbles to go crazy all over your tongue. Composed of a selection of juice from white-chalk soil vineyards in the Touraine appellation. Made according to traditional methods. Lies on lathes for more than 18 months during fermentation and maturation.

In the glass, this Pinot displays a dark ruby red core with slight pink and garnet reflections on the rim. The enchanting nose is a paradigm for classic Burgundy with aromas of red cherry, underripe strawberry, hibiscus, and rose petal over savory aromatics of wet mushroom, exotic spices, wet herbs, damp leaves, and forest floor. The palate is medium-plus in body and boasts substantial depth, immense structure, and ample minerality for a village level lieu-dit. Freshly picked red fruits are perfumed with wet roses and forest floor then evolve into significant minerality for a lingering, classic finish.

Aurélien Laherte is a force to be reckoned with in Champagne. In addition to taking a progressive stance on natural viticulture and winemaking, Laherte and his father, Michel, both believe that the use of chemicals and herbicides prevents a full expression of terroir. ‘Ultradition’ Brut is a Pinot Meunier (60%) dominant blend, rounded out with Chardonnay (30%) and Pinot Noir (10%), fermented in foudre, tank, & barrel, with regular lees stirring.

Made by Charles Dufour, using vines owned by his mother. Base 2013, disgorged May 2019. Vinous and expressive, this is very exciting to drink. Creamy, salty, and a little butterscotch, with an electric backbone of acid, which is an irresistable combination.
