We wanted to see what would happen if we married the Kishu Mandarin with our Jalapeño ferment (what we use for our hot sauce). The result is something similar in color to a Yuzu Kosho (Japanese yuzu pepper paste), yet it has a softer texture as we do not strain out the gut healthy liquid - meaning it can be mixed into a rice or vegetables with ease or added into a sauce as a layering ingredient.

For the development of this edition, Cuna de Piedra chose to experiment with La Lupulosa beer, from their Tijuana-based friends at Cervecería Insurgente. La Lupulosa was one of the first IPAs made in Mexico, and is made with large amounts of American hops that give it an intensely fruity and citrusy personality. When thinking about what a chocolate bar with La Lupulosa would be like, Cuna de Piedra imagined an experience of brilliant flavors making a parallel journey with notes of chocolate, so they decided to work with cocoa from Comalcalco, Tabasco and roast it with a moderate profile to highlight these characteristics and obtain a pleasantly citrusy and very fragrant tablet.

We drove to John's House, as we've done for the last 5 years - and John greets us in, what appears to be, the same pair of sweatpants / plaid shirt tucked into them combo that we've seen in years past. John also sports a handlebar mustache thick enough to be a contender at the World Beard and Mustache Championships. We all go over to the tree, and using the pickers and baskets, we muscle the 100 pounds or so off the tree by throwing them into the pool (where they wash) followed by a removal by pool skimming. It's a process just to get them to Sqirl so imagine what the 2 day process is for making the jam....!

Sqirl's Housemade "Fruit Cheese"
What is a fruit cheese? A fruit “cheese” (i.e. more solid in texture) requires a similar cooking process to fruit spreads in which pectin-rich fruits like pomes and stone fruit (black currants work, too) are cooked with equal parts fruit and sugar (and, in our case, a higher percentage of acid) until the mixture is reduced of most of its water content, yet malleable enough to pour into forms at high heat.
Perfect on a cheese plate–think: manchego & quince (a traditional, iconic combo), a Damson plum paste with a blue (Stichelton) and red walnuts, or a Gravenstein apple w/ a soft yet pungent goat cheese and a fleck of Maldon.
Currently, we have Membrillo (Quince) from Frog Hollow, Damson Plum from Wind Rose Farm, and Gravenstein Apple from Walker Apples.

Tara is credited as the first known commercial Native American winemaker of only a handful in the world. She and her wife, Mireia (a Cataluynian winemaker), started Camins to focus on winemaking in the Sta Rita Hills. 'Camins' means 'Path' in Mireia's native Catalan and references how the two met and have now fulfilled their dreams of making wine in Tara's ancestral homeland.

Kuri Kuro Dark Chestnut Imperial Stout
This beer was originally developed for export to the North American market. It is a brew based on Kuri's “Hideji Stout.” It uses Miyazaki-grown chestnuts, and features a flavor rich in nuts, herbs and sweet chestnuts along with an aroma of espresso and brown sugar from roasted barley.
The chestnut is the most ancient fruit in Japan. Charred chestnuts have been found in and around archaeological sites of the Jomon Period (10,000 - 200 B.C.) settlements. Japanese chestnuts are widely used in preparing Japanese cuisine, and a special dish made of chestnut is served as a New Years tradition.

In the late 1800s, Vienna brewers made three versions of their amber lagers. The highest alcohol version was called Marzen or Fest Bier. The lowest alcohol version was called Abzug, which means "discount" or "reduction" in German. These beers were the Austrian version of session beers. Heater's version tips the scales at 3.75% alcohol by volume. It's crisp, refreshing, with a nice floral Saaz hop nose, a malty palate, and a clean finish.
