Basha Bekele Natural, Ethiopia
For many of us who work in specialty coffee, Ethiopian naturals were our gateway drug. The best examples are so intensely fruity and complex that after tasting your first, it's hard to think of coffee as just coffee anymore.
Natural-processed coffees - dried in the cherry rather than after removing the fruit - are by no means new to us at Huck, and we roast naturals from all over the world. But there's something special about how the fruit-forward processing combines with floral Ethiopian heirloom coffee varieties, so these coffees hold a special place in our hearts. Huckleberry’s Wheat Ridge café is finally open, and to celebrate, we’ve got a weird one for you! We only have a tiny bit of Sipi Falls Hydro Honey this year, and this coffee will only be available at Huck’s 5 cafes and on our website!
Okay, so wtf does hydro honey mean? This falls a bit out of our usual processing repertoire, so bear with us for a sec.
In a normal honey process, coffee cherries are depulped, then the coffee seeds are dried with some amount of the sticky fruit, aka honey or mucilage, still on the seed. In this case, the team at Sipi Falls Wet Mill experimented with several variations to boost the complexity a bit. So in this case, these coffee cherries were held in-cherry for 48 hours in an anaerobic environment, then dried as a natural (cherry still on) for 2 days. Then the cherries were rehydrated, depulped, seeds fermented without water for another 12 hours, then finally laid out to dry on raised beds, without washing. Overcomplicated? Probably. Tasty? We think...

There’s nothing like a great Kenyan coffee - intense brightness and fruit, juicy mouthfeel, and big sweetness in a combination that’s pretty much impossible to find anywhere else. Rukira - our second Kenya of the 2022 harvest, is exactly what we’re looking for from this unique origin.
Rukira is one of 17 factories (Kenya-speak for washing station) in the larger Othaya Farmers Cooperative Society, and while this is our first time roasting Rukira, we look to the Othaya Cooperative for at least one banger coffee each year. Santa Maria, Costa Rica
Santa Maria is back, and we're excited to have both Cooperativa de Caficultores de Dota (CoopeDota) specifically, and Central American coffees generally, back in the roastery! 2023 is the seventh harvest roasting up tasty goodness from CoopeDota and farmers in the village of Santa Maria, and this year's Santa Maria is among the best we've roasted.
We're always excited to roast the goods from CoopeDota because the coffee is tasty, and the group has always been a sustainability leader in Costa Rica. In 2011 the cooperative produced the world's first certified carbon-neutral coffee, and is known for its work to reduce both its carbon and water footprints. CoopeDota washes all of its coffees using an Eco-Pulper - a machine that uses significantly less water to remove the coffee's fruit and mucilage from the bean. While it's not necessary with this machine, the cooperative does give its microlots a chance to ferment before washing, which tends to boost complexity.

Entre Rios, Nicaragua
It's been a couple years, but Alberto Ramos and his farm, Finca Entre Rios, make their return to Huck! We weren't able to buy Alberto's coffee last season, but this year our friend Alejandro - of CaféNor in El Salvador - helped us reconnect!
Alberto named his farm Finca Entre Rios, because it sits between the San Francisco, San Isidro, and Margaritozo rivers. He's been farming his father's farm since his teens, but purchased his own land in 2007.
Nicaragua is kinda a weird origin, where it's common practice to wash coffee on-farm, then deliver wet coffee to a central drying facility. In most other countries, it's more common to deliver coffee in cherry on the day of picking, or fully washed and dried. Cherry or dried parchment tends to be a bit easier to control, and in many Nicaraguan drying facilities/purchasing stations, there's a big risk that coffee will sit wet too long before drying, developing defects. Over the past several years, the AProCafé Atitlán growers association in Guatemala has been a bedrock of our coffee lineup. These growers produce our Atitlán Aprocafé coffee, which we love dearly (and is super tasty this year), but we've worked on some other projects with the cooperative so that we can grow together.
One of the cornerstones of that collaboration has been a single farmer microlot program. Doña Lucinda, Guatemala
Lucinda is back in the lineup and her coffee’s tasting extra delicious this year! While Lucinda’s no stranger to the Huck lineup, the 2023 harvest is one of her best in recent memory!
We've been working with the Aprocafé Association in Guatemala for years now, and back in 2015, Manuel Tzic Saso and Lucinda Puac Perez were the first two farmers Huck featured on their own. In the years since, we've roasted standout coffees from other farmers in the group, but it always feels good when we get to feature one of the OGs.
Lucinda and her husband Bacilio are some of our favorite farmers to visit when we make our near-annual pilgrimage to Guatemala - caring, hospitable, opinionated but open to feedback, and hilarious. All smiles, every visit. After a few years of good, but not amazing coffee, Lucinda made some subtle tweaks to her post-harvest processing, and the last 3 years have been a return to form!

Musa Abalulesa, Ethiopia
Floral, bright, and refreshing, we love washed Ethiopian coffee, and while we had a bit of an atypically-processed outlier with Danche Marcelo, we’re stoked to get into more typical, but no less awesome washed Ethiopian flavors with Musa Abalulesa.
While most of our Ethiopian coffee comes from the South (Yirgacheffe, greater Gedeo, and Guji), Western Ethiopia also produces some amazing coffee, and we’re excited to bring some Western Ethiopian coffee back into the Huc fold. Finca Monte de Oro is Huck's other Guatemala sourcing relationship, and while we do put a lot of focus on the AProCafé Association, there's no shortage of other great coffee in the country. We started sourcing coffee from Mario 7 years ago after being introduced by a mutual friend, and from day one his innovative approach to processing has set his coffees apart.
Mario has traditionally produced both honey-processed and natural coffees, and until two years ago, we had always roasted either the honey process or a blend of natural and honey together. Over the past couple years though, due to some weird climatic variances towards the end of the 2022 harvest period,and the fact that honeys are just very labor-intensive, the farm has decided to focus its efforts on the full natural process. Productores Cafenor, El Salvador
Cafénor is relatively new sourcing for Huck, but back for year two, and we hope for the long haul!
Cafénor is the brainchild of Alejandro Valiente, and after spending some time with Alejandro and the Cafénor team this past February, we're hooked. Alejandro grew up producing coffee, and after cutting his teeth setting up Central America operations for a larger multinational exporter, he returned home with the goal of doing things right. He's a true believer in the push for more environmentally- and economically-sustainable coffee, and Cafénor puts carbon neutrality and farmer payments first and foremost in its coffee mission.
Cafénor works with a dedicated group of growers in the Metapan area year-after-year, coordinating group purchases of farming inputs and equipment, and aiming to deliver 80-85% of the final export price directly to the farmer.
