This is a place you go to enjoy a good atmosphere and views, but this restaurant is overrated. Having to wait several weeks for a reservation makes you believe the food is outstanding but it's a bit plain. We had the paella and other popular dishes that were OK but nothing special.
Went here for my birthday with a group of 9. Drinks are strong but delicious! Most of us got the street tacos which were great especially the chorizo taco. The queso was so good, I could have ate just that all night. The staff was honestly the best part of the experience. They were super accommodating for our large group size and they hooked us up with some churros and ice cream with a little birthday candle which was so thoughtful.

Traveling back through Colorado from Utah and with so many possibilities in restaurants, we narrowed it down to El Jefe and were incredibly impressed. The service was fun, welcoming, and informative. Everything we ordered was delicious! The plantain quesadilla was something else - sweet and savory, and plenty. We celebrated a birthday and the staff celebrated with us, and bought our birthday celebration a shot. This is the best place in Colorado. I may be biased, but I'm usually hard to impress with Mexican restaurants and I'd make this my go to place as a Coloradan
