Nestled in Greenpoint is a simple and elegant French bistro with the best pancakes in the world. The pancakes are light on the inside and thin-crispy on the outside. With a thickness that means you can get both in one bite, the result is a pancake that needs no syrup. The pancake's taste is delicate sweetness and light creaminess, with a texture that keeps you happy with the light crunch and satisfied when the moist middle melts on your tongue. I don't mean this to be flippant: this is the best panacke. In. The. World. As for the quiche, the quiche was ... well dang it. The best quiche in the world. No joke. The trick, it turns out, is to have more filling than egg. Most quiches are custard-forward. Don't be. Be filling-forward, with fillings that go well with a custard binding. That's what the chef does here to excellent effect. I hate kale and this is the first time I've enjoyed eating kale. I can't imagine what happens when they use ingredients that I already like. It's absolutely bonkers that I've gone this long without realizing a great quiche is not about just the eggs ... a great quiche is about _everything else_ and the eggs ARE SECONDARY. They'll be closed until I think late May or June. Once open, get out there. Pick a weekday or something b/c everyone else has learned about them by now. Get the pancakes as you would an appetizer, and then each person at the table get a main. That way you are not just enamored of the pancakes but also everything else on this excellent cafe's menu.

Hype-relative rating. (Expected effort / wait time: 1⭐.) Cute place, good service, but totally over-hyped. Pancakes were thick and crunchy but also crumbly, somewhat flavorless, and dense (not light at all). Pig's head tartine and bread were great
Way over hyped. Cool spot and service was amazing. Pancakes were a huge let down. Tasted like a burnt pan. So heavy so greasy. Zero fruits on the plate to make it better.

Une période Terrible Hostess got our reserved table wrong and went wierdly BIG saying we couldn't sit anymore because we had reserved wrong. However... It's pretty easy to prove a reservation is correct She caught a worse attitude and it took 20 minutes to fix her seating before we could go to our table. Skip this place- you can pour syrup from cringey heights elsewhere. Kid-friendliness: Not kid friendly
