Michaelangelo, Gio and Tommy are Fantastic. I fine done often and they made me and my group feel like family. I will come back just for them! BUT the food, atmosphere and expresso martinis are enough a strong selling point as well. Great as always. Thank you Carbone MIA!

I recently had the pleasure of dining at Carbone, and I must say, it was a fantastic experience. The food was absolutely delicious, and each bite was a true delight. Whether you're looking for a romantic dinner or a special celebration, Carbone is the perfect choice. The combination of good food and an exclusive vibe truly sets it apart from other restaurants.

"The place is absolutely amazing and the attention of the team is second to none. Despite these factors that make it so special, a question arises: is it okay to present a dish as bland and lifeless as the one I'm going to show you in the image? It doesn't seem congruent with the lavish luxury and great features that the place offers. Let's remember that, despite being among the best, we must not neglect the small details that make the difference against the competition."

I had a great time dining at Carbone. Reservations: I tried to book a table a month in advance for our visit to Miami and the tables were extremely limited (only tables available at 11p) and most days no tables were free, so I put my name on a waiting list for the entire time we’d be in town. They seem to open up their tables 1 week in advance, so it was relatively easy to book after that but the illusion of scarcity really increased my interest in going. I selected an outdoor table which was lovely, as I live in an area that is colder and thought an outdoor experience would be quite novel this time of year, but I wish I had eaten inside because the decor was extremely elevated and seemed like a fun experience. The check in process was a bit awkward- getting into the restaurant and funneling people in and out was a bit overcrowded. The customer service was excellent though. There was good coordination between all workers and we were provided with some overall recommendations of what to order. I did think we were encouraged to over order though. I felt like we ate too much food (although it was all excellent). We got the Caesar salad which had the most incredible croutons I’ve ever eaten- crispy and soft on the inside. They make it table side which is fun to watch the preparation. We then got the spicy rigatoni which I was told was a must have. Cooked Al dente it does have some good spice. We were then given their complimentary bread, salami and cauliflower which is extremely generous. The bread includes some focaccia which has tomato spread on top and some extremely delicious garlic bread. The cauliflower is marinated in a vinegary brine which was maybe my favorite thing I ate all night. We got the salmon and the shrimp scampi. The salmon was cooked medium (would recommend this) and was served atop some garbanzo and cannellini beans and was very good. The shrimp scampi was good but I’d probably not order this again. I thought it would be served over pasta but it was only the shrimp. We also got a side of artichoke hearts which were good and had a spicy marinade. Overall I think I’d reduce my order to include the Caesar salad, spicy rigatoni and one main (the salmon) for two people and then maybe order the coconut cake for dessert (we did not order dessert because we were so full). But they did give us little bites of Italian cake as a compliment.

Just left an amazing dinner at Carbone. Amazing service and atmosphere. For starters, the Cesar salad was great and is a must. The spicy rigatoni does live up to its hype. The balance of spice and creaminess is what makes this dish memorable. The tortellini was not my personal favorite, however we are happy with the meatballs our waiter recommended us to try. To finish off, the hazelnut cake is a must. Comes with ice cream and gold flakes. Overall great experience and awesome food.

Go for the scene and service - food is ok. Spicy Vodka Rigatoni came out very oversalted, but the waitress was great and removed it from the bill even after bringing out a new dish. Calamari was cooked perfectly - should ask for the sauce on the side since it was very heavy. Veal Parmigiana was very good but pricey for what it is.
