1615 pisco acholado, bergamot, cilantro, tonic, lime after his final exploration of peru's ucayali jungle, dr. Diaz brought back aromatic edible leaves that the locals called sacha culantro. He shared the leaves with raul, his bartender friend, who lightly muddled them and created a cocktail. Raul presented the drink to dr. Diaz and the amazonian spirit never left the bar. At bar chrystie, the cocktail is faithfully recreated with citrus-infused 1615 pisco acholado, pink peppercorns, lime juice, tonic and the famed jungle herb.

Capitan Cacao
La diablada pisco moscatel, punt e mes, campari, averna, aperol, crème de cacao peru's take on the manhattan, el capitán has its origins with 19th century italian immigrants who brought with them a taste for sweet vermouth. The fortified wine was soon mixed with pisco, becoming the drink of choice for peru's generals, hence its name, and a beloved bar classic in lima. An inventive bartender added cacao essence from his grand- father's hacienda in piura to salute the legendary singer, madame perricholi, a chocolate devotée. The variation at bar chrystie brings together la diablada pisco, crème de cacao and rich punt e mes instead of vermouth, and adds a touch of aperol and campari, which lend dryingly bitter and fragrant orange notes.

Seedlip spice 94, vanilla & cardamom, coconut, lime in the 1500s, portuguese traders carried coconuts from southeast asia, planting palm trees first in west africa and then in the caribbean. Cardamom from the east, allspice from the west indies and vanilla from zanzibar likewise sailed with them to each new port of call.
