A Cup of Sushi is reimagining and bringing a modern twist on how to eat sushi with these sushi cups and I'm enjoying this new way of eating sushi. I like the appealing look of it and it's packed with so much delicious and nutritious ingredients. Their cups are 7 layers of goodness. It comes with 10 wholesome power foods, grain & sauce choices and they're low fat, high fiber. They also include Konjac noodles which is pretty cool. They're located within a ghost kitchen and online ordering is very easy! Cups I tried: Rainbow Cup - Boiled Shrimp, Salmon, Tuna, Yellowtail, Avocado, Fish Egg, Edamame, Cucumber, Nori (Seaweed), Butter Lettuce, Pepitas, Pickled Ginger, Asparagus, Kaiso Crystal, Pickled Radish Dragon Cup - Shrimp Tempura, Eel, Tamago (Japanese Omelette), Avocado, Imitation Crab, Fish Egg, Pickled Ginger, Edamame, Kaiso Crystal, Yamagobo, Cucumber, Radish, Micro Greens Caterpillar Cup - Eel, Tamago (Japanese Omelette), Imitation Crab, Avocado, Cherry Tomato, Kaiso Crystal, Edamame, Carrot, Radish Sprout, White Sesame, Nori (Seaweed) Each cup had its own unique taste. The portable convenience of a sushi cup makes it easy to eat while on the go. I really enjoyed how everything within the layers mixed together for a great taste.

You definitely need to try this place because not only is it unique but also super delicious!

A Cup of Sushi is in one of those interesting multi-restaurant/kitchen shops with just one cashier/pick-up counter. We were about to use the touch-screen kiosk but it turns out you can't apply coupons there (even though both are using Toast as the payment processing) and through March 31st, A Cup of Sushi is offering 50% as long as you're spending above $20. My friend got the Poke Cup and the Caterpillar and I got the Hawaiian Noodle. The presentation and toppings are cute and the sauce is plentiful, just had to knock stars for a series of mistakes: my friend got two Poke Cups instead of her Caterpillar and Poke, they gave her a cilantro ponzu sauce instead of the one she had selected, and my cup had a crack in it so it was leaking the entire time.  The noodles were a nice chewy/bouncy texture and doesn't have the extreme chewiness of the other popular konjac noodles (Miracle Noodles). Overall, nice flavor that I would get again if I was in the area, but not one I would choose over a poke bowl due to little improvement wishes: that there was more sushi in the cup lol and that there was a build your own option. The outdoor seating is a very beautiful circle of trees, though it's limited to 3 benches and 2 pairs of adirondack chairs. Also, no restroom access and the occasional airplane overhead.

Perfect for a grab-and-go lunch.They are actually one of 8 restaurants located inside this ghost kitchen centered completely around takeout/pickup! You can mix and match from any of these businesses into your order, and simply walk in and ring a bell to pickup. Ideal for when you want a fresh and healthy meal to-go. The flavors and ingredients were pretty standard (a bit pricier than  I'm used to) but I think the ghost kitchen concept is interesting and worth a try. It is well-suited for the office-heavy district it's located in.
